This is my Laurie's recipe for Bagelwiches. My family loves them.The great thing about them is that you can make so many varieties of them, using fried egg, scrambled egg, various meats (bacon, sausage, ham, etc,) and all kinds of cheese. I love that they are healthy, economical, and make a satisfying breakfast, brunch, or light dinner.
Laurie's Bagelwiches
Love: Jenny Burdge
Cook an egg ( or two) per person: scrambled, fried, etc. Set cooked eggs aside. Cook the meat: bacon ( you know me, I bake my bacon in the oven!)sausage, ham slices, etc....
Using the type of bagel you like: Bagelthins, Bagels, Sandwich Thins, etc... Place the cooked egg, cooked meat, and cheese slices ( whatever flavor you like: smoked Gouda is extra yummy, Cheddar, American, Havarti etc..) between the bagel slices.
Place olive oil in a saute' pan and grill the bagelwhich.
