This is a recipe from my precious Kylie. She is from Australia and we lived in Spain for 5 years together. This is what she calls a very traditional "comfort" food, that was a regular meal in her childhood home growing up.It is so yummy and super easy! You can use apricots, peaches, or mango for the nectar part of the recipe. It will turn out very similar in taste, (but makes for an easy substitute when the pantry or taste buds require it.)
Kylie's Apricot Chicken
6 Chicken thighs
1 packet dry French Onion Soup
600 mls Apricot Nectar ( or peach or mango.)
3-5 carrots chopped into chunks
1-2 cups of peas
1/2 an onion diced fine
Place Chicken into a casserole dish. Pour the french onion soup over the chicken. Mix together well. Add the nectar over the chicken. Mix well. Add the veggies. Bake in the oven for 45 min- 1 hour. 180 C or 300 F.
Serve with Rice ( i use Jasmine or Basmati) and warm bread.
Love,
Jenny
