Fish Tacos

          I have made these many times for the family, and it always delights me to see just how much they all enjoy them!
I hope you will try them out on your family too! Don't be afraid of the fish ( verses traditional beef or chicken..) its really quite tasty! Jb and I like to top ours with feta ( second picture above,) but the kids aren't as keen on that twist!

Fish Tacos

1-2 Pound of mild white Fish( such as Tilapia etc..)
12-18 Hard and Soft Taco Shells
Chopped: lettuce, tomato, onion
2-3 cups grated cheese
1 cup Feta cheese ( if desired)
Garnish: fresh cilantro, salsa, sour cream, olives etc......

Lay fish on baking pan, drizzle with Olive Oil, and season  fish to taste ( I like: chili powder, Smoked Paparika, salt, pepper, Cumin, fresh Cilantro, fresh garlic, etc...)
Bake fish about 20 minutes ( until flakey)
While fish is baking prepare toppings: chop lettuce, tomato, onion, cilantro, olives, grate cheese etc.....

When fish is cooked, flake with a fork.

Fill hard and soft tacos with: fish, lettuce, tomato, onions, cilantro, cheese, sour cream, salsa, olives, and feta ( if desired.)
