16 Bean Soup

One of my family's favoite comfort dinners is "16 Bean Soup." I love it because it is really easy, full of protein, and very economical. ( If you have a ham bone, then this meal costs under $3.00) for an entire family!
We will usually have some leftovers, but not enough for a another full meal. So, I will get another meal out of the leftovers by repurposing with a few of these ideas:

* Bake potatoes, and top with bean soup ( drain liquid off) sour cream and cheese
* Drain liquid off soup and put inside flour tortillas. Add cheese, sour cream, etc and waa-laa burritos!
* Bake corn bread. Place a big buttered piece in a bowl. Top with lleftover bean soup ( again, I drain the juice off the soup.)
* Steam rice 3-6 cups ( depending on family size) butter. Then serve Soup ( drained) over the rice.

Using a bag of "16 Bean Soup"( found on the dry bean isle at the grocery.) soak beans over -night in two quarts of water. ( or do the "quick-soak" method.)
Drain and rinse beans.
Add in crockpot or dutch oven.
Place beans with about two quarts of water to cover. Bring to boil.
Add: diced two-three cloves of diced garlic, 3 Tbsp Oregano. 2 Tbsp Basil, salt, Pepper, dash or two of Tobasco, 3 Tbsp smoked sweet Paparika, 1-2 bay Leaves.

Possible 4-H Adventures in the Burdge House!

             For the past two years, we have been praying over, gathering information, and learning about the possibilites in breeding Rose. I looked online for a "stud" and many people either: wanted hundreds of dollars to use their services, or lived hours away. Then, there the first person I really felt compelled to actually contact this Fall, low-and-behold lived right here in Denton! Her name is Marie and she is the owner of "Puggsly" who is apparently quite the reume' for the job at hand! So, together, Marie and I have been patiently waiting for Rose to go into heat.
                Well, this week, it happened! I contacted Marie and she happily has agreed to bring "Puggsly" here for a weekend stay! ( He should arrive this evening, if all goes to plan...)
                 So, we will see..... Not sure how Rose will do, or what she will think of this new little guy ( and his alterior motives....) I am actually feeling a bit guilty in bringing a new roomate around for a weekend for her. :)
                  It will be a bit exciting though to wonder "if "she will get pregnant. It is an opportunity I am totally new too. I have NEVER breed dogs before. I really thik it is something I would like the kiddos to experience at least once though, so hoping it happens! I would love any and all tips in the breeding process. Trying to "learn as I go."

Hopefully I will be posting soon asking for doggie pregnacy tips and then puppy tips!

Manhattan Clam

This is a version of Manhattan Clam Chowder that my family really loves! We all enjoy the traditional chowder with a cream base, but this one, with its tomato base, is a nice change. And like many recipes I share here on the blog, this one is economical and packed full of flavor. The great thing about this recipe, you can cook it in the crockpot! Its an easy and cozy dinner to be sure.

Manhattan Clam Chowder
Love: Jenny Burdge

1/4-1/2 pound of salt prok, or bacon, diced or fried
1 large onion, diced
2-4 carrots, thinly sliced
1 Tbsp parsley
3 celery ribs, sliced
1 pound, 12 ounces can tomatoes
1 Tblsp salt
pepper
3 8 ounce cans clams with liquid
2 whole peppercorns ( if you have, or add more pepper)
2 bay leaves
3 Tbsp Thyme
4-5 medium potatoes, cubed

Combine all the ingredients in slow cooker. Cover. Cook 8 to 10 hours.

A very interesting, sweet, (and yes sometimes even a tiny bit annoying,) thing that Rose does is in taking my houseshoes and hides them around the house when I leave. I often am a bit amazed at this endearment she has towards me.

As soon as I leave, I take my slippers off and leave them for my return ( because the moment I get in the door, they go right on my feet!) Its then, that she goes and finds where I have left them, and then hides them in the most random places around the house.

On this one day not long ago, she had left them in a wonderfully sweet ( and thankfully this time, obvious place.....) for me on the back of the couch! now, if I could only train her to put them there everytime!

Ralph's Pasta

This is one of our family favorites and a for sure "Go-To" meal in our house. My Kylie's husband Ralph made this for us for years in Spain. Its simple, economical, and very flavorful! Mix it up by serving the sauce over many types of pasta too.

Ralph's Pasta
1 Pound of Pasta ( I use whole wheat)
28 ounce can of crushed or chopped tomatoe
small can of Tomato Paste or sauce ( optional)
Half a package of bacon ( diced)

1/2 to 1 onion diced
1-3 garlic cloves diced
3 Tablespoon of spices you like ( I use all!) Rosemary, Oregano, Basil,
Salt and pepper
Parmesean Cheese
Add 2-4 Tablespoon of Olive Oil to a large saucepan. Add: diced bacon, onion, garlic and gook until tender. Add Tomatoes and simmer. ( simmer anywhere from 20 minutes to longer if you have time.)
While sauce is cooking, boil pasta to al dente' and drain. Return to pan and add 2-3 Tablespoons of butter.
When sauce is done, serve generous helping over pasta and sprinkle with parm cheese.
I love serving this dish with my "Tomato, Moz, Garlic Bread" ( Its in recipes on my blog!)

I am reading (with my precious Accountibility group) "When I Don't Desire God How to Fight for Joy" by John Piper. It is a stretching read. And to me, it is a deep, hard, painfully honest look into our hearts, our thoughts and perceptions of God, and our true love and devotion ( and the struggle in that) for Jesus.

This week I had some real heart burdens while reading. Humbling, yes. Honest, yes. Sad for me, very.

John Piper said ( and I have never heard it put this way...)
" God is glorified in his people by the way we experience him, not merely the way we think about him. Indeed the devil thinks more true thoughts about God in one day than a saint does in a lifetime, and God is not honored by it. The problem with the devil is not his theology, but his desires."

How close and neck and neck I come to that. Thank you Mr.Piper for helping to expose me. Humble me in the millions of ways I need humbled. How closely I resemble the devil himself in my arrogance.

Thanksgiving 2011

Our Little group that gets together when we are out of our Chec Co-Op celebrated Thanksgiving by reading Thanksgiving stories and making these adorable pilgrims. Each of the kiddos ( along with many Mama hands...) made their own. While we were helping put this guy ( and his hundreds of teeny-tiny multiple felt parts) together, it dawned on me that my Laurie had been the one who volunteered to have all the parts cut in advance for 18 children! When I realized how labor intensive it must have been, she hesitantly and graciously admitted that it too her FIVE hours to cut it all out....

Needless to say, I was in shock! I told her good thing she did it, as we woudl have drawn a pilgrim if I had been the one to volunteer he he......She didhowever, say it was really worth it. They really were quite precious and the kiddos were very proud of each of their pilgrims!

Halloween Night

                         Halloween Night was shared with precious friends again this year. So grateful for sweet friendships. We all had dinner together: Taco Soup, chips and dips, and our traditional " Dead Hand Punch."
                   We then went out through our neighborhood Trick-or-Treating. We had a great variety of costumes from :Rock star, beauty queen, elegant princess, Scream character, skeleton, war men, 2 cheerleaders ( Laurie and I made the skirts and had "A" embroidered shirts made here in town from "Off The Cuff,") Pippi -Long -Stocking, Angelina Ballerina, and a great Balloon Head Man! Audrey and I even made Izzi and Rose Tutus!
                   It was a sweet time of fun, fellwoship, and yes candy!!!

Halloween Wreath

You know me, not too crafty, but I try! So for this Halloween, I wanted to make a wreath I saw online. It was made of tule and a great big orange ribbon! Really easy, and quite festive. Audrey and Audrey made one for their bedroom door too! ( notice theirs has the "bling" on theirs and also transforms into a great hairpiece!!!" he he)

Garage Sale Blessings.....

You know I love garage sales...I really do! I find great delight in decorating our home, getting fun clothes for us all, and gathering many original treassures from them. Have to say,I do have a few neighborhoods that are my very favorite here in Denton.
But, on this one special fall day,...... it was just extra special! Two objects representing two things I love were found on this day: A precious Weimarimer Pillow ( that is absolutely beautiful, whimsical, and original) and a Bodum coffee press! ( I also found a great vintage pilow for our bed and a rose hair ribbon for a special seven year old little girl...)

So fun! A pastime I really enjoy. It is so neat to see the little way God provides... To see how he loves so intimatley and personally is breathtaking.

Thankful for Co-Op

               Here are our three youngest doing a repeat of the science experiment they had done earlier that day at Chec ( Our homeschool Co-Op.)
              My sweet friend Janet Tanner has done an outstanding job teaching them in her "Hands-On Science Class!" She has put a love for science in Alec and Audrey that they never would for sure have never gotten from me. Literally EVERY Monday, we leave Chec with: goup, fizzles, mixes, dyes, bubbles, etc. Alec and Audrey can hardly wait to get in the car and tell me all about their experiment for the day. Then in the evening, they try their hand again doing them with each other. Very fun!!
              Thankful that God gives us precious groups to belong to that encourage us, teach our children along-side us, and that we are able to share life with.

             And Janet, your a tough act to follow and I am grateful for you!

Spanish Candy in Texas

We love the store World Market here in Denton. They sell things from all over the world, that are hard to find, but yet common in other countries. So, the other day, our kiddos were delighted when we found the marshmallow candies ( that we ate almost daily!) at World Market!
For me, It is still at times so surreal to me, (after having lived five years overseas,) when I see a product that is made in a nearby village, that we frequented weekly. It has been three years now that we are state-side, and although the many memories are sweet and precious, at times they are a bit painful, missing it so... But I am so grateful that God in His goodness and plan, has kept those special feeling deep inside of me for refelction and comfort.

Bagelwiches

This is my Laurie's recipe for Bagelwiches. My family loves them.The great thing about them is that you can make so many varieties of them, using fried egg, scrambled egg, various meats (bacon, sausage, ham, etc,) and all kinds of cheese. I love that they are healthy, economical, and make a satisfying breakfast, brunch, or light dinner.

Laurie's Bagelwiches

Cook an egg ( or two) per person: scrambled, fried, etc. Set cooked eggs aside. Cook the meat: bacon ( you know me, I bake my bacon in the oven!)sausage, ham slices, etc....
Using the type of bagel you like: Bagelthins, Bagels, Sandwich Thins, etc... Place the cooked egg, cooked meat, and cheese slices ( whatever flavor you like: smoked Gouda is extra yummy, Cheddar, American, Havarti etc..) between the bagel slices.
Place olive oil in a saute' pan and grill the bagelwhich.

Alec ( our sweet and precocious nine year old, third child) and I were talking the other day about my Dad. He made a cute observation about "Papaw getting old one day.." It went something like this.....

Alec: "Mom, one day Papaw will be old!"

Me: "So what do you think your Papaw will look like when he is old? And how old will he be?"

Alec:" Well, I think about 70 years old, is old. And he will have one of those walker things, you know, with the tennis balls on it..He will use it like a motorcycle and still go fast!"

Fish Tacos

I have made these many times for the family, and it always delights me to see just how much they all enjoy them!
I hope you will try them out on your family too! Don't be afraid of the fish ( verses traditional beef or chicken..) its really quite tasty! Jb and I like to top ours with feta ( second picture above,) but the kids aren't as keen on that twist!

Fish Tacos
Love:Jenny Burdge

1-2 Pound of mild white Fish( such as Tilapia etc..)
12-18 Hard and Soft Taco Shells
Chopped: lettuce, tomato, onion
2-3 cups grated cheese
1 cup Feta cheese ( if desired)
Garnish: fresh cilantro, salsa, sour cream, olives etc......

Lay fish on baking pan, drizzle with Olive Oil, and season fish to taste ( I like: chili powder, Smoked Paparika, salt, pepper, Cumin, fresh Cilantro, fresh garlic, etc...)
Bake fish about 20 minutes ( until flakey)
While fish is baking prepare toppings: chop lettuce, tomato, onion, cilantro, olives, grate cheese etc.....

When fish is cooked, flake with a fork.

Fill hard and soft tacos with: fish, lettuce, tomato, onions, cilantro, cheese, sour cream, salsa, olives, and feta ( if desired.)

Jb and I are doing a couple's bible study with a group of really great couples at church. Its a privledge to be in this particular group, and we are thankful for them and the opportunity. We are going through the book "What DidYou Expect" by Paul David Tripp.
Last night, as we listened to the first session of the dvd, Paul David Tripp touched on the topic of the heart, and what is really dwelling deep inside of us. He gave a quote that really pricked my heart, and challenges me to reflect deeply. He said, "When we say: 'Please forgive me for saying x,y, or z,' what we really need to be saying is;"

"Please forgive me for saying what I really meant to say."

Oh how I needed to hear that. Now time to reflect on that and unearth it in my own heart, thoughts, and words.Good stuff...

Hugh Jackman's Ginger Fried Rice

I tried out this recipe about one month ago, and have made it about seven times already! The kiddos and Jb really really like it! What I love about it: it's healthy, full of protein, easy to fix, a "one dish meal,"and super economical! Don't let the fact that there is no meat in this dish scare you off. Thanks to being topped off by a few fried eggs, it really doesn't need it a bit.

Ginger Fried Rice
Love: Jenny Burdge

12 Tbsp Olive Oil
5 Tbsp minced fresh garlic
4 tbsp fresh minced ginger ( could use powder if need)
6 Cups of rice( cooked) I add butter to our also
2-3 Leeks
Mild chili powder ( my family likes "Sweet Chili Sauce" on this dish too)
12 large eggs ( Or enough for each person to have 2-3 eggs per rice bowl
2 Tbsp Seasame Oil
2 Tbsp Soy Sauce

Heat 4 Tbsp of olive oil in a skillet on high heat. Add 2 Tbsp of minced fresh garlic and ginger. Cook until crisp, about 2 minutes. Transfer mixture to a paper-towel -lined plate.
Heat 5 Tbsp olive oil in a large skillet over medium heat. Add remaining garlic and ginger and cook for 30 seconds. Add Leeks and cook until they begin to soften, about 2 minutes. Add rice and cook, stirring often, until it begins to brown, about 5 minutes. Season with salt to taste and 1/2 -1 tsp Chili powder.
Heat 4 tbsp in skillet and fry eggs ( 2-3 per person) according to taste. Sprinkle each egg with pinch of chili powder ( I do not do this fo rour kiddos..)
Put rice in bowls.Top with fried eggs. Sprinkle with garlic, ginger, and drizzle with seasame oil and soy sauce.

So, last night I downloaded the latest pictures. One never knows what types of pictures they will run across do they? So, as I sat and tried to figure out what these pictures of three silly boys and a sister were all about, naturally, I asked.

Me:"Tell me about these pictures? What were you playing?"
Alec:"Ohh Mom, those are 'Mugshots.' When Micah was over playing last week, he had us all take our mugshots!"
Me: "Ohhh.......OF COURSE..... ( What else would it be??)

Gaylord 2011

This summer we went back the The Gaylord Hotel, which we did last year and loved. We would like to make it a tradition! Of course we do take some shorts-cuts so we are able to go:

First of all, The Gaylord offers "Thank-You Thursdays", which means you get to stay for half price! So, Thursday night it is for us! Also, we bring our: Dinner for that evening( which we enjoy on our room balcony,) breakfast for the next morning ( as you can see from the picture its a unusually fun kind of breakfast!) Also, I pack our lunch for the following day, that we enjoy by the pool.Takes a little bit of planning, but worth the savings.

The kids love going here, as do Jb and I. It is such an amazingly beautiful hotel and I can honestly say they are always sad to leave. This year they got air-blasted tattos by the outdoor pool. They were so proud of them!

This trip you dont see our Arian. Football had just begun, and even The Gaylord couldn't compete with his 6:45am wake-up to be on the field! We missed him...

Summer Play: Cousins, Friends, and Face Painting at the Park

Towards the end of our summer, we spent many mid-days at the park ( yes even in the 107 degree heat!) with our precious friends. On this special day, our morning began with my nephews, Preston and Jack, over to play. Alec and Jack spent hours conquering the universe with army men, battle guys, Starwars troopers, and tanks, lots of tanks.....Preston and Audrey opted for a few rounds of cards, something they both really enjoy doing together.
Then we were all off to the park, then the waterpark for more fun! We had a pleasant surprise at the park that day, a sweet lady was doing the painting! She was really good! I think she did some of the most creative and beautiful face painting I had ever seen. She was so patient with the kids, letting them pick and choose the type of "character" they wanted to be. Then she ever-so-carefully painted each kiddo's face. They looked really great! Fun days....Love our family and friends, who share them with us.

While cooking, I have been Listening to......

One of my very favorite activities is listening to music ( all kinds!) while I cook dinner for my family. A great way to get a wide variety of music is to go to the local library, which has a pretty good selection.This week, I have been listening to Robert Plant and Allison Kraus. Its pretty good. Kinda earthy, and a bit meloncholy, and in some songs a bit soothing.
When I listen to music, I am reminded and always amazed how God gives so many people ( musicians, pastors, athletes, actors, doctors, nurses, gardeners, artists, and even the stay and home mama he he...) such a wide variety of talent in such amazing and unique ways. May we all use what He has given us to His glory alone!

Tostadas

I made Tostadas the other night, and the kiddos really enjoyed them! Somehow, they had never had them so it was great fun! I used refried beans, chopped tomato, lettuce, black olives, sour cream, and shredded cheese. For Jb and mine, I also added Feta cheese.

Favorite Beef Stroganoff

This is our family's favorite Beef Stroganoff recipe. It comes from my Great Aunt Sissy's cookbook.
I normally alway use ground beef, but you could use beet tips, etc also. And I always serve it over egg noodles ( or as above) brown rice.

2 pounds of ground beef
1 onion, diced fine
2 cloves of garlic, minced
2 Tablespoon Butter
2-4 Tablespoons Red wine ( optional)
2-3 cups of fresh mushrooms, sliced
16-24 ounces of sour cream ( depending on taste)
3 Tablespoons Worshestershire Sauce
Salt and papper to taste
4 Tablespoons Olive Oil
2-3 Tablespoons of Smoked Spanish Paparika

4-6 Cups of Brown rice, egg noodles, etc...

Place olive oil in sautee' pan and sautee onion and garlic. When nicely brown, set aside. Place butter in sautee' pan and cook mushrooms. When tender, set aside with the onions and garlic.
In the mean time, cook rice, noodles, etc according to directions on package.
Place ground beef in the sautee' pan and cook until browned. Return the onion, garlic, and mushrooms to the pan and cook together a few minutes. ( I like to add a few Tablespoons of red wine for flavor) Add Salt, Pepper, and Smoked Paparika.
Before serving, add sour cream to meat mixture, and stir all together gently.

Serve over egg noodles or rice.

Iced Coffee Mmmmmm....

Been drinking lots of iced coffee lattes this summer here at home. Using my espresso machine, I whip up a mocha latte and pour it over ice. It is refreshing, full of caffeine, and seems to make the late mornings all the more lovely.
The crazy thing is, I can remember growing up and my Grandma using her leftover brewed coffee, adding milk, and sugar, and pouring it over ice. I used to think that was really "yucky" and always asked her "Grandma, how can you drink that?" Who would have known that there is a world-wide chain that has made billions off that very idea!

Last week the kids asked if I could make Tortilla de Patata...So, we did it Spanish style and pulled out the olives, salami, crackers, cucumbers to go alongside our Tortilla.

Two Little Girls, Scissors,Tape, yarn, and Construction Paper

Audrey and Audrey were here playing a few weeks ago. They asked me for: scissors, tape, yarn, and construction paper. They went off to Audrey's room for over an hour. When they came and got me and begged me to come see their creation, this is what I saw: A sea of Lanterns!
They had made about 20 paper lanterns and hung them from string, balanced from bedposts, furniture, doors, and from teh ceiling. It was precious and delightful!

I Love what comes to their sweet imaginations so naturally at this tender age.

The "Handy " in My Man

We have been in need of a drying rack in our laundry room for some time now. After pricing drying racks, and figuring out there was no real space for one in our laundry room, Jb came up with a great solution! Knowing my love for cutting financial corners, AND having things that are a bit quirky, I loved what he came up with!

He went and bought a galvanized rod and turned it into a clothes drying rack! Whimsical and functional all at the same time, love it!

My Dad, Cool Isn't he?

So all I got to say is...... " How many of you have a ( almost 66 year old) Dad that looks as cool as this?
Seriously, my Dad just got back from a 10 day Harley trip up in Colorado with 3 guys. I think its awesome that he loves to be outside, enjoys nature, has such sweet friendships, takes care of himself by being physically active, working hard, and is in great health.
And, all the while can look so cool! Pretty insipiring really.....

I sure love him and am so proud of him.

Preparing For Travel

Audrey and I are getting to go to Pittsburg to see Laurie, Audrey, Isabelle, and Laurie's sister Beth. We are all so very excited for this special time together. Every year, Laurie goes back to her home in PA for a visit. They left 6 days ago. We have talked for years now in us joining too one day. So, this week is the week that Audrey and I get to do just that! Audrey is of course, beside herself in excitement. Flying on a plane and joining her best friend, is beyond thrilling for her ( and me too!)
In preparation for the trip, I spent most of yesterday cooking for Jb and the boys. I whipped up Pasta with a homade bacon and tomatoe sauce, and a family favorite Kylie's " Fantastic Fish Pie."

Hopefully this will love on my sweet husband while I am gone and help express my gratitude in letting us go and play!

The Day After.....

In the Burdge household, we have a sweet little tradition. The day after one's birthday, we all enjoy having leftover birthday cake for BREAKFAST! Needless to say, I am pretty sure most of the ingredients are pretty much equivent to doughnuts, except, we did not dunk the cake in oil and fry it! :)
The kids love this, and this and think it is a real break in the rules in doing so!

Happy 9th Birthday Alec!

Our Alec turned 9 years old Thursday! We had a very full day of basketball camp, home for a fast lunch of pizza that was enjoyed with having friends over, the Scheer boys and Cassie Dotson ( Audrey needed the girl support with 6 guys in the house he he...,) After lunch, we returned to camp, then, a trip to the waterpark. After the water park, Alec went on a "Birthday Date" with his Daddy to see Cars 2 ( at the "big movies!')
After he movies, we all sat down to celebrate Alec with his favorite meal (Mom's Chicken Terriaki,) presents, and of course birthday cake and icecream!
So, it was a full and fun day!

We are all so very thankful for our sweet and fun loving little guy! He is full of joy, has an infections laugh, a twinkle in his eye like no other, is so observant, and self assured. We thank God for the gift of him!

Lemonade Stand When its ( only!) 105 Degrees Outside!

Time- Its a Gift

So when your precious friend takes your kiddos for an entire afternoon, treats them to a day on the lake, dinner, and even gets them all bathed, whats a girl to do?
CLEANS OUT HER CLOSET!!!
So thankful for an afternoon where I could do what I enjoy least: organizing! With a terrible allergy infection and all, I got in there and got it done!
Thanks Laurie for loving on me and our kiddos by giving me the sweet gift of: Time in the house alone! It is oh so rare for this Mama to have that, and I was so thankful for it.

Snow Sled and Wishful Thinking....

So, I was at a garage sale on Saturday and found this cool red snow sled! I was remembering the last few years here in Texas (where we do in fact have a few fun days of quite the "Winter Wonder Land") and how I always wished the kids had a sled. So of course, I got it ( afterall it was only $2.00.)
Then, as I got in my car and read the temperature at 102 I had to REALLY remind myself that we actually really do get that thing called snow. So hard to believe right about now. Since we have had zero rain this summer, and scortching days around here, I was stretching to say the least at remembering anything but...... However, the pictures we have from last year are proof that we will one day again see those fluffy things called clouds, or even rain, and even perhaps a bit of snow! Here's to hoping!!

My Precious Uncle

This is my precious Uncle Tommy. It is John and my absolute pleasure and privledge to go and get him weekly or every other week,from his school to take him to dinner with our family. Dad makes it possible financially for us to do so and we are most grateful. Words cannot describe the blessing Tommy has been to me for my entire life.

I grew up with him as my Grandparents took he, my sister Amy, and I for outtings almost every weekend. We would go on many picnics, ride the Fort Worth train, walk the Fort Worth Water Gardens, walk around the many area lakes, visit my Great Grandpa in Mckinney, picnics of fried chicken, have endless meals together here in my grandparents home, always having some of our favorite loved meals that Grandma always made for us all to enjoy( she always took such pleasure, time, and energy to make our favorites) laying down for an "afternoon rest" as Grandma would sing songs to the three of us, we would lay together and Amy and I always chuckled as we watched Tommy lay almost motionless as he put 2 or 3 huge pillows over his head ( just soaking in this calming and soothing ritual we shared together..)These are absolutley some of the best of my childhood and young adulthood memories.

Now, John and I appreciate our relationship that we each have with Tommy and the relationship our children have with him. Tommy is so very special to us all in so many ways. He teaches me something every single time I am with him.I am most grateful..

I love you Dad for trusting us with your little brother. I love you Tommy for being the very special Uncle God made you to be.

Shhhh.. They Really are "D-O-G-S"

In our house, we are well, a little bit more than just "in love" with our sweet Izzy and Rose. We are quite crazy about them. We often joke that Izzy really thinks that she is "human," ( as Weims are typically characteristic of behaving as such...)
So yesterday, when Aden and Audrey put Izzy and Rose "down for a nap," they looked... well... actually quite content and even a bit natural at it.. ( Okay, mabey a little " too natural and too content!" he he!)

We sure love them both. They both are a very special part of our family.

Homade Peach Perserves

We went to the Red River Peach orchard a few weeks ago with sweet friends. It was a delight to the senses I will say. We picked peaches right off the trees, filled our bucket ( about 10 pounds worth....) and ate the ripest, juiciest ones we could find as we walked along too! The next day came I made jars of homeade Peach Perserves...
They were absolutely some of the sweetest and juicest peaches we have ever eaten. We have enjoyed putting the perserves on buttered toast, and ontop of vanilla icecream!!

Sports World 2011

Our Church does this amazing summer camp called "Sports World." It is a week of total fun, sports, activity, learning about our Lord through, and a bit of good ol' fashion controlled chaos through: fellowship, discipleship, music and sports! The kiddos each choose the sport they want to be involved in for the week ( football, basketball, dance, tennis,soccer, volleyball etc.)

The week consist of them going from 9 am - 3pm for the five days! Each camper is either on the "Blue Team" or the "Red Team." The entire week they are deeply devoted to their team color ( ie face make-up, Hair colored, clothes that are red or blue, chants and songs of red verses blue etc..We even did blue and red sprinkles on our breakfast!)They even have a much anticipated day of "Yaa Yaa at the WaWa" that is a water sport day.

But this is no ordinary camp! It consist of the amazing youth DBC Leaders, college, high school, and junior high student volunteers! I am amazed that these young people love the Lord and our kiddos so much that they would devote this huge amount of time, energy, and talent for an entire week!

As a Mama, I can't say how grateful I am to Denton Bible, the staff, and the many many student volunteers for continuing to pour into our kiddos this way. It is ABSOLUTELY by far the highlight of my children's summer for three years now!!

Arian Cooks!

Arian cooked dinner for us not long ago, and it was so very tasty! He had to make it for his Food Science class, and was very impressed with the dish. It is Johnny Carrino's Sundried Tomatoe Pasta Alfredo. I have to say, it was very very yummy and he did a great job cooking!

Arian's Johnny Carrino's Sundried Alfredo Pasta

1 pound of Penne Pasta ( we use whole wheat)
6 Tablespoons of butter
1 cup of whipping Cream ( or half and half)
Package of Sundried Tomatoes
1-2 cups of Asiago, Romano, Parmesan Cheese
1 Cup of portobello mushroom ( sliced)
3 Green Onions sliced thin
2-3 cloves of garlic diced fine
3 Chicken breast cut into bite-size pieces

In a skillet, put 2-3 Tablespoons of Olive oil and sautee' onions, garlic, and mushroom until tender. Set aside. Add chicken pieces to pan, and cook until cooked through. Set aside. In a small saucepan, put 2 tablespoons of butter, melt, add tablespoon or so of diced garlic, cook, sautee' a few minutes. Then add whipping cream and 1-2 teaspoons of flour, to make Alfredo sauce. Add 1/2- 1 cup of parm cheese. Let simmer a few minutes. Add salt and pepper to taste. ( I will also sprinkle tiny bit of nutmeg.)

Boil water, add pasta, cook to Al Dente'. Drain.

Return cooked chicken, onions, garlic,and mushrooms to sautee' pan. Add sundried tomatoes. Stir gently to mix. Add Alfredo sauce.
Add cooked pasta, and stir gently to cover noodles in sauce.
Serve and sprinkle Romano, Asiago, or Parmesan Cheese over each serving.
Enjoy!

Six flags!

Dad took Amy's family and our family to Six Flags to kick off the summer in May. We all had the best time riding rides, running around, yelling, screaming, and enjoying a picnic together... We stayed from open to close ( thanks for hanging in there Dad and Gigi...You really were troopers!) we finished off the day by him treating us for a late night snack to Taco Bueno.
Hands down I think all of our favorite ride was the well loved "Double Loop Roller Coaster." I remember riding that coaster when I was young, and it was terrifying and thrilling all at the same time! Now, I loved it all the same. I did however notice that I became a bit more aware of how God so sweetly knits our bodies toegther. I kept becoming more familiar with new parts of my back, neck, and head, in a whole new way. I don't quite remember noticing that that before, when I was younger and rode the rides.
Ahhhh, age........it does creep up in the funniest places, doesn't it?

It was a great day! Thank you Dad for the amazing time!

Aden's Birthday

Our Aden turned 10 this year! We are now in the double -digits with number two son! We had our family birthday on his birthday, May 8, so we celebrated with a few friends at the end of may.

Dallas World Aquarium

We visited The Dallas World Aquarium a few weeks ago, and it was fabulous! It is not just an aquarium though..... It has a rainforest, penguins, jaguar, sloth, variety of monkeys, many reptiles, flamingos, variety of sharks, manatee, turtles,owls, huge variety of birds,and of course fish! It is really quite beautiful and very educational. If you live in the Dallas area, or plan to visit, it realy is a "must see" place.

Apple Store Field Trip

We took a Field Trip to the Apple Store in Southlake a few weeks ago... It was a wonderful trip full of learning and creativity for the kiddos. I was so very impressed with what Apple did. They had about 8-10 staff there for the children( so there was one staff per each pair of kiddos.) They spent about an hour and a half educating them with computer knowledge, skill, practice,and then the kids created their very own musical cd! They got to take their musical Cds home, along with an Apple T-shirt.
And did I mention the entire event is FREE!?
It is a really fun experience. I encourage any group to call Apple and set up a field trip. You will really enjoy it! I believe they stop taking reservations fo rthe summer, but will start up again in the Fall.

Cookie Making Just For Fun!

Dance Recital 2011

Last weekend was Dance Recital here in the Burdge home! It is a fun day for all the girls and so exciting to finally perform the dances they have worked a year on.
This year Audrey danced a tap number to" Blue Suede Shoes." Her ballet was performed to " Pink Panther."
The girls did a beautiful job. After the recital, Audrey was greeted and given flowers by her Papaw, Gigi, Daddy, and her brothers Thanks for coming Papaw and Gigi, you made the day extra special for our little Ballerina!

Deserts from Fredricksburg

When we went to Fredricksburg this Spring, we did pop into a wonderful little bakery to take home a few goodies. The bakery is really quite famous down there, and after eating the confections, we sure knew why!
We got: Chocolate Mexican Cake, Hello Dollly Bars, and a Lemon Bar. Jb and the kiddos favorite was the Lemon Bar. Mine was a toss-up between the chocolates!

I have been inspired to bake more since then. Just yesterday for Jb's birthday and father's day,I made Sour Cherry Pie ( for Dad,) homade
Carrot Cake with Cream Cheese icing ( for Jb,) and 2 of my Grandma's "Pink Lemondae Pie" for the kids. Will post pictures and recipes asap!

Rice, Egg, and Tomato Meal

This was an all time quick and easy dinner to get on the table after a busy evening, when we lived in Spain. It is a very common evening meal in Spanish homes. Had to do a important substitution though. In Spain, "Tomato Frito" ( taste very similar to our Ragu pasat sauce) is a staple. So , that is what I substituted ( a pasta sauce) in the Tomato Frito's place! :) ( You could buy pasta sauce or make your own. Also, they woudl use white rice, I used brown or Basmatti.

I made it for the family the other night and it was huge sucess! I know it sounds a bit strange, but it really is very good. Full of protein, very very econmical, and super easy. Try it out on yoru family...

Spanish Tomato, Egg, and Rice

1 dozen eggs ( or amount depending on family size)

4-6 cups of cooked rice

16-20 ounces of pasta sauce

Cook rice ( white, brown, basmatti, etc.) according to directions. You will need about 4-6 cups depending on size of family. In mean time, warm up ( or make) the pasta sauce. Keep warm after cooked.

When rice is done, add 2-4 tablespoons of butter.

Fry eggs. I make 1-3 per person ( depending on how many they woudl like.)

Spoon cooked, buttered rice into individual bowls. Pour pasta sauce over the rice. Add the fried egg(s) over the top. Top with salt and pepper.

Last day of Barcelona

The last day of Barcelona included giving our sweet Luis and Oscar some treats from America. Then Kylie and I were off for another day together! We began the morning stopping by Starbucks.....( of course!) Then we did a bit of shopping at Carrefour ( a favorite shop, much like our Targets here in America..)

We then did a little more toodling around Kylie's bario ( which by the way includes the famous "Rhombla.") This is a long street that is full of life! There is all the hustle and bustle of life along this street. That includes: schools, coffee shops, bakeries, fruit stands, small grocery stores, children playing, dog walking, etc etc.....The street is closed off to pedestrians mostly during the day hours. It was there that we found a beautiful bakery that made an enormous "Tangled" Cake, complete with Rapunzel and her tower, Barcelona futbol cakes, and many other beautiful pasteries. Later,we popped into a quaint coffee shop ( The Republic) and sat for a sweet time of coffee and chatting. We made our way to the end of the rhombla for a pretty view of the ocean!

More of day in the city! Of course having a huge Barca fan here in the house, Arian was extremely floored when he asked what I had seen in the city that day.. When I went through our little list of stops, I heard on the other end of the line "MOM! You are telling me you did'nt go and see the Barca store?! Well, you just have to go back for me and take a picture. (please...) Those of you who follow soccer, of course Barcelona is one of the major soccer clubs in Spain and has won the Champions League, Copa Del Rey, and several other accomplishments. They are Arian's absolute favorite team and the fact that I was even close to their "official store" was huge to him...
So... after the Sacrada Familiar, we:
Stopped in the Official Barcelona futbol store. Went several times ( wink..wink..) for coffee. Diana got "Chocolate." This is a thick chocolate drink, ( you realy enjoy with a spoon) topped with whipped cream. Kylie and I continued to enjoy Cafe' con Leche. Admired Barcelona's cafe's flair of food ( lots of types of sandwhiches, topped with tiny eggs, jamon, tuna, tomatoe, etc.....
A tasty day for eyes and palete to be sure!

Barcelona Sagrada Familiar

We went to see the absolultey stunning, breath-taking and unigue Sagrada Familiar while in Barcelona. It was designed by Goudi and construction began in 1830. They are still working on it today! The estimated date of completion is 2020. You can see the birth, death, and reserection of our Jesus sculptured throught the beautiful church. Goudi was known for his very unusual, yet beautiful style as an artist. Pictures can barely give his amazing work justice. It was absolutely spectacular!

Hanging Out, cooking, and Chatting in Barcelona

Some of the very best times in Barcelona were us just hanging out at Kylie's and cooking together, ( we three have always loved to cook!) chatting, more chatting, and I even got my toes painted! Just being together and having a good catch-up was what was the sweetest part of all.
The following day, we hit the streets of Barcelona for coffee ( okay, we had coffee like 3 times that day he he...) shopping, and to see the Sagrada Familiar..... Pictures tomorrow!

Visit to Barcelona

I just had a wonderful opportunity to go see Kylie is Barcelona! It was so wonderful to see her. I have not been back to Spain since we moved back to the states ( 2 years and 9 months ago...) They too left Seville a year after we did and moved to Barcelona, (hence why I went there. ) John and I would of course love to go back to Seville with the kids. We can all hardly wait for that time to come.

But, this trip was all about seeing Kylie and what their life up north is like. Our close friend Diana flew up from Seville to spend two days and a night with us! I will share pictures here on the little blog for the next few days remembering the trip. It was a precious time!

Thanks dad for making the trip happen for me, and Jb for holding down the fort for 6 days while I was gone!

British Lunch!

Grandpa's Extra Cornbread

I grew up sharing many meals with my Grandma and Grandpa. One fond memory I have is getting the biggest joy in watching my Grandpa enjoy eating the leftover cornbread for his dessert! ( Thats right..Dessert!)

So, I have loved passing on the tradition to our children. They love having cornbread as their dessert, or for breakfast the next morning.

Sweet Dessert Cornbread

Cut up little chunks of cornbread,place in serving bowl.

Add a tablespoon or two of butter, warm it about 30 seconds in the microwave. Sprinkle a few generous spoonfuls of sugar, and pour milk over to desired consistancy...Serve and enjoy!

After taking Arian with me to a surprise date to "Cups and Crapes," here in Denton aone Saturday morning, and seeing how much Arian enjoyed it, I just had to try making for the family. So, following all the direction the cook had given me, I did my best. The picture above was the results... The family really enjoyed it and everyone even had seconds! So, after that confirmation, I wanted to share with all of you. Happy cooking!

The Huddy

Love: Jenny Burdge * The amounts listed are just suggestions for serving anywhere from 2-6 people.) 2-3 eggs per person, 1 onion, 1-2 cups of fresh muchrooms, 1 -2 bell peppers( if desire,) butter, 1-2 gloves fresh garlic, 2 cups of desired cheese ( I use Gouda, but any favorite woudl be great,) 4-6 cups of hasbrowns, 2 big handfuls of fresh spinach. In a skillet, add 2 tablespoons of butter and saute' onion, mushrooms, fresh garlic ( and any veggies you would like ie: bell peppers etc...) When those are done, add handful of fresh spinach. (When cooked through, place the veggies aside.) Cook 2-3 eggs ( per person) according to desire. ( Sunny Side up is recomended. But you could do "Over Easy," Scrambled, etc..) In Olive oil, cook the hashbrown until golden. Once they are cooked, gently lay the veggie mixture inside half of the hashbrowns. Add the cheese and fold the other part of the hashbrown over. Transfer the hashbrowns to a plate, and place the fried eggs ontop. Love, Jenny

Fredricksburg, Tx

During a few days of our Spring break, we were able to go to Fredricksburg, Tx and stay in a little cabin of our precious friends The Bishops. The cabin sits on 900 acres, so there is lots of landand lots of fun. There was also this fabulous thing called "The Rhino!" It is a four-wheel machine that takes you here and there, and all over the rugged terrain on the land, and boy, is it fun! Each of the three little ones drove me around ( yes they sat, drove, all by themselves!) It was great fun! Arian and Dylan also got their fair share of turns. Those two rode around in the dark, (with headlights on,) chased a few skunks in the day, and saw a family of deers run through the trees in the early evening.

It was amazingly beautiful and peaceful there. To go to bed at night with the only sounds being critters and crickets outside... To wake to the sun coming up, and hearing nothing but a blustery wind, and a gentle calling of birds in the distance, was peace to the soul......

Having dinner on the back porch with fun conversation, laughs ( and yes... our Family drawing journals) made for a sweet time. We all could have stayed for days more and hope to go again soon! Thanks again so much Calvin and Cathy! We love you!

Dr. Pepper Dublin, Tx

During Spring Break, John, the kids, dylan (a buddy of Arian's) and I went to Fredricksburg to stay a few nights at our sweet long-time friend's ( The Bishop's) cabin in Fredricksburg, Tx. On the way there, we stopped in Dublin, Tx to see the original Dr. Pepper plant.

That Saturdayhappened to be Saint Patrick's Day, so the festivities were doubled! Once there, the kiddos shared a Dr.Pepper float. For the occasion, the float came colored GREEN! Also, three youngest got to have their picture taken with a life-size leprechaun! Notice Arian and Dylan are not in the picture, Ijust couldn't convince them....

Jan's Beef Tips

This is a home-style wonderful recipe from my dear Jan. It is now a family favorite of ours. I think it is super comfort food, and easy too!

Jan's Beef Tips
Love: Jenny Burdge

2-4 pounds of Beef Roast, Beef Tips, or Strew Meat
6-8 Cups of Beef Broth
Rice/ Egg Noodles
Flour, butter ( for gravy)
garlic

Using a roast, stew meat, or beef tips, cut the meat into bite-size pieces. Sprinkle beep tips with flour. Add salt and pepper.
Brown meat in a skillet with 5-8 tablespoons of Olive oil. Add fresh chopped garlic, 6-8 cups of Beef broth. Simmer for about 5 minutes.
Transfer all of the ingredients to a crock pot and cook on low for about 8-10 hours. ( The longer the better and more tender the meat becomes!)

Using beef broth, flour, and butter, make a gravy in a small saucepan.

Serve Beef Tips over buttered rice or noodles, pour gravy on top.

Mustache!

When a Favorite Aunt Stoney send you a package of mustaches in the mail, what do you do with them? YOU HAVE FUN! So...... thats what our kiddos did.

They turned the mustaches into:

Driver's License!

Well, John and I have officially entered a new season in parenting! Our oldest, Arian, got his driver's license this past Friday night. He was elated to say the least. We were well.... of course proud of the encouraging comments his instructor gave him, but also, a bit unsteady as we begin to enter into this new phase of life, as a family.

Nana ( my Mom) was here spending the night, so she joined in on the fun. Aden, Alec, Audrey, and I picked out some balloons ( yes Hot wheels, he he) and I made his favorite dinner ( Chicken Terriaki) to help him celebrate his big day. Then we all watched him drive off ( alone..... Gasp!) to my Dad's house to share his good news.

Ahhh, when a wee one takes a first giant step (drive.....) out of the nest.......

Valentines...

January and February, Audrey and Audrey N. had been saving carefully to buy each other a Valentine Present. They wanted to get each other the "Valentine Starbucks Bear."

When the day came to exchange, they were thrilled! The sweetest thing about it was that they didnt know the other one had bought one to give too! So the their presents, they were very surprised, when they each opened up their present and and it was the very same thing! ( And the fact that the whole thing was their idea, idea, was just so sweet...)

Of Course the exchange was extra sweet since Audrey N. was so thoughtful and brought Aden and Alec some candy. We also made Homade Strawberry Valentine cupcakes together, to complete the afternoon.

Our Laundry room has feeling a bit drafty and chilly lately. I said to John " It feels so cold in there, I am guessing about 48 degrees.." (Since I am always cold, I wasn't getting much sympathy.) But, I just had to know how close my guess was.So, after going out to fetch the thermometer off the front porch, I tested my guess... It was a crispy 49 degrees!

It didn't get me out of doing laundry, but made for a good experiment!

Happy 7th Birthday Audrey!

We just celebrated Audrey's 7th Birthday February 13, 2011. We began the festive weekend on Friday. We wnet some of our precious friends to Central Market in Fort Worth, where we had homade cupcakes and gelato from the Gelato Bar. After singing, celebrating, eating, and presents,we followed each other to the Fort Worth Children's Museum.
Sunday ( her actual birthday...) we went as a family to Starbucks for hot chocolate, Chai ( for Daddy) and latte ( for Mommy.) Then, we went to celebrate! We met up with Papaw, Gigi, Aunt Amy, Preston, and jack at Chuck E Cheese. Papaw treats us all to a birthday dinner, and Chuck E Cheese was Audrey's pick! We all had fun eatting pizza, playing games, opening presents, and eating homade Strawberry Cake.
* ( Will post recipe soon. It was a new one and it was really yummy.) And, I will get some pictures of the weekend up right away. Wore the battery right out over the weekend.........
The weekend was fun, celebrating Audrey and God's gift to us for her was the best part! Daddy and I love you sweet Audrey. You are unique, independent, gentle, sweet, and a joy for your brothers, Daddy, and me.

Sea Salt and Butter New Potatoes

We used to go to Tavira, Portugal to this wonderful "Mom and Pop Family-Style" restaurant. They served one meal. Yes just one and it consisted of four items:
*Grilled fish ( so yummy, freshly caught , and came in it's entirety ( ie: head, tails, skin, etc..)
*Boiled Sea Salt and Butter New potatoes
* Green Salad
*Fruit for dessert.
And of course, bread. Every Spanish meal is served with bread.

Our family really loves New Potatoes cooked this way, so I thought I would share easy recipe....

Sea Salt and Butter New Potatoes

2 pound bag of new potatoes ( or desired amount.. Usually about 5-8 per person)
1/2 - 1 stick of butter
Sea Salt
Wash potatoes ( leaving skin on.) Boil in large pot until tender. Remove potatoes and drain. In pan, melt half a stick of butter ( or one depending on amount of potatoes) and melt.
Once butter is melted, return potatoes to pot, add sea salt, and stir gently.

Fireplace

One of the things we have really enjoyed these past ice days is our fireplace. We have never had one before and it has been so wonderful to have one. John has gotten up early each morning to get it back to going strong. So, we have all had the joy of waking up to the sweet smell of warm wood throughout the entire house. The fire has even lasted all night long each night,since he and the boys have tended to it all day.

So, it was precious when Alec said one morning to me, " Mama, the fire stayed up all night!"

Loving these sweet times when the little sayings of a child are just so precious and innocent...

Homeade Butter

Our boys Aden and Alec have been reading The Big Woods by Laura Ingalls Wilder. We are reading this at home and also they are reading it in one of their homeschool co-op classes. One of the most wonderful thing about co-ops is that your kiddos get these crafty and gifted mamas who teach them things that you are so not good at! :)

This week, after the calss read Chapter Two,their teacher Sheila Smith, had all the children make butter! Thats right, real cream butter! They took the cream, shook and shook ( Alec said " at least 20 hours!) and made into real butter. Delightful!

The boys were escpecially proud when they brought home their little Mason jars full of their homade butter. We all enjoyed spreading it on that evenings' dinner rolls.

The Hunt!

A few days ago, we watched the most hysterical game of hunt" between our Izzi and a squirel who had taken up residence in a tree of ours.

The game began with the squirel perched ever-so-closely , yet ever-so-far up in the nook of a tree. Izzi was up for the challenge, on point, and walking a gentle and ginger step ohh... so carefully.... Over and over and over, till squirel actually got a bit fearful and scamptered away!

She would then come inside, only to go out again, great anticipation of the kill. Pointing, stalking, and giving a whole new meaning to "If Looks Could Kill." But the squirell clearly was in for the thrill !

We all laughed in hysterics as we watched Izzi spot this guy from the kitchen window, race outside, thus begin the game, over and over throughout the day....

Aden and I were secretely praying that she really would'nt catch it. Our prayer came true. She never did, but by days end, she was one tired pup.. She overall just seemed very satisfied to live up to her breed standard, of a true hunting dog ( in great suburban Texas!!)

Ice Day Three

Well, we have experience three days of icy roads and very cold temperatures, for us Texans. This is very unusual for us.... So, I have taken a few pictures of what we have been up to the last few days.

The morning began bylooking outside and seeing that the street was pretty much the same. Sidewalks and blankets of ice all around. Request then came from oldest son for French Toast. For this family that meant one loaf of bread and 12 eggs, everyone asked for seconds! The afternoon was spent roasting marshmallows. Yes, that would be inside in the fireplace ( I am a wimp!) But we did use real sticks from the real outdoors, (does that count?)

Gotta love it when the school district has canceled school each day, the day before, about 2:00 p.m.

( We take this ice thing serious around here, I should say.....)

Raw Milk- We're Hooked!

The Burdge family has made the switch ( or should I say, returned to our little Spanish roots..... he he!) We have gone back to drinking raw milk, (as we did for five years in our littlle village of Gines, Spain.)

Just like then, as we got it from our local dairy there ( okay, the milk man brought it straight to our door...lovely, yes....) We are buying it now from a local dairy farm. Laurie and I take turns to head out too Lindsay, Tx ( about 45 minutes from Denton) where we buy four to five gallons ( each) at a time, and freeze three of them. They do great being frozen and thawing, so thats a special plus.

There is so much research on the health benefits of drinking raw milk. I wont bore you with my little piddly synopsis. You can find plenty of research online or at the library.However, being married to a man who grew up on a real farm, and drinking real milk- its so worth it to us in taste, quality, and health benefits. An extra blessing for us is letting the children see that milk is made from cows, NOT Target. Having them be aware that our farmer works so very hard to care for his cows and produce wholesome food for us, is very important we feel.

I do have to say another huge part that has become important to us is supporting a local farmer, and his family who are making an honest living. I am amazed at the work, dedication, and quality in making and good product that he puts toward his farm. And our family is humbled to be able to share in the bountiful fruit of his labor.

Today we had a snow/ice day at here in DFW! IT all began last night with:

* Shouts from a teenager as school was to be closed in the morning! And thus began a plan with buddies for an all-night game, packing fest!

* Little people awakening to see a blanket of white covering the ground! And then watching them layer five, six, and seven, layers of clothes to "keep out the cold!"

*Snow puddles all around the house.

* A Mama getting to have a quiet time ( at an hour that wasn't around 6 am!)

*A daddy, who, between trying to get some work done, becomes the object of play, and eager to get out in the elements ( and I know that includes the thrill of driving in the stuff!)

* Two beloved doggies who, one loving thrill of the chill, running around and around the yard ( Izzi.) And the other, ( Rose) who would just assume go potty in the garage as opposed to getting tiny feet in the snow!

We have enjoyed playing around the house. Kids running in and out ( and out and in.....) and me getting to noodle a bit lazily doing this and that...Made hot chocolate ( to warm tummys after outside play) and cinnamon rolls. Lunch was tuna salad on warm rolls. Dinner is looking like Chicken and dumplings.

Really love days like this. Time to reflect on slowness. Ease and simple things really. A chance to just look, listen, and see God all around in so many ways! Thanking Him alone for His goodness, His love, the precious variety , (even in ways like the weather!) He gives us.....

Favorite Quiche

This is my all time favorite quiche recipe! It is my Kylie's ( from Australia) Mom's recipe. Iis the most delicious,versitle, economical, easy, and (crustless too!) quiche I think I have ever made. A real staple in our house. It is great to serve for company, to taking to the ballgame, a picnic, or easy Sunday dinner.

Another beauty in this recipe is that you can literally add almost anything to it ( I have even drained my homade Chicken Tortilla Soup and made a "Southwest version.")

A few of our favorite combinations are: Ham & Swiss, Turkey & cheddar, Ham & feta cheese, Bacon, onion, and cheese, Zuchini & Bacon , Ham & Mushroom, Broccoli & cheese, Asparagas & Ham, Veggies, Bell peppers etc... You can create almost anything!

Favorite Quiche

Love: Jenny Burdge

5 eggs

1/3 Cup melted butter

1/2 Cup flour

2 cups of milk

salt and pepper

veggie of choice ( ie 2 zuchinni, mushroom,bell peppers etc.. about 1-2 cups worth)

1/2 Onion diced finely

6 rashers of Bacon ( or meat of choice)

2 Cups shredded cheese

Beat ingredients together until well combined. Pour into casserole dish, or pie plate etc.. Sprinkle grated cheese ontop. Bake at 400 degree for 30-40 minutes. Cool for 5 minutes then serve. Yummy room temperatue or cold too!

Aunt Stoney- Overnight Stay

Cooking together, sharing our meal together, drawing, games, and laptime (with Rose,) were all a part of Aunt Stoney's last short overnight visit! After Christmas, Stoney went back with Mom, Pop, and Kelty to San Antonio.

Then,in January, on her way back to Montana, we had the privlege of getting to have her stay another night here with us. She is so precious to me, John, and the kids! She is currently continuing her amazing artwork ( and I had the absolute privlege to sit and see some of her work!!) She is also applying for Graduate School. You can see why her biggest sister ( uh, hum that would be me.....) is praying that God just may give her that opportunity at our local UT in Austin! :)

( Of course, I really want what is very best for my Stoney...) But the selfish big sister in me finds UT a whole lot more apprealing than say, Berkley, CA! He he!
( Sorry Stone... Thats' her first choice... And of course I will be thrilled if thats' where you end up going to of course!

Brisket Wraps

Ranch Dressing

Warm up brisket and slice. Lay out large Roamine lettuce leaves. Fill lettuce with brisket. Drizzle Ranch dressing over meat. Gently fold over ( taco style) and enjoy!

Christmas Eve At Our House

We shared Christmas Eve with Dad, Gigi, Amy, Preston, and Jack . Before our meal, we enjoyed listening to John read passages from Luke. Afterwards, we all shared fun conversation over our big meal of turkey, ham, and all the fixings!

Over dessert, we each drew part of the Christmas Story and shared with one another. As you can see, even the dogs joined in n the fun! However, Rose got a bit sleepy, and rested her head on the table ( while in my Dad's lap..)

On to Christmas Festivities

Our little group carried right on along into the Christmas Season.. We began with a three week course of "Christmas Around the World." We went to: Sweeden, Spain, Australia, Ethiopia, Germany, and back to America! Each Mom was responsible for one country, chosing a craft, and a traditional food to teach the children. I am not sure who had more fun, the Moms or the kids! It really was a blast!

My kiddos of course wanted to do Spain.. So we did a Los Reyes ( Three Kings) craft, and I made a traditional "Roscon." This is the traditional cake most everyone in Spain eats the night of the Cabolgata ( Parade of the Three Kings...)

The children were thrilled with excitement as we cut the Roscon and looked for the hiding trinket. Tradition is that whom ever gets the piece of cake with the trinket inside, then would pay for the Roscon!

Turning 16

Arian turned 16 in December and we all had alot of fun celebrating!

Thanksgiving and Apple Pie Making

A little recap of our fall... We had a wonderful Thanksgiving here at our house. Nonni ( John's mom,) my Mom, Pop, Dad, and Glenna all joined us for a delicious meal and a sweet time of being together. The day was spent, eating Pop's amazing smoked turkey, Nonnie's favorite grilled shrimp,and all the dishes of a traditional Thanksgiving meal.

After our tummy's were full, and we checked off our "What We ate on our Plates," (on our butcher paper table-cloth,) filled in our placecards of "What I am Thankful for...," and all drew "What We Are Thankful For " in our drawing journals,(you know me, I had to add a bit of whimsy to the day,) we settled in for dessert, coffee, and fun games of Ya-hoo....This game is very special, as it was John's great grandmother's. Aden had a great time taking on his Papaw, Pop, and Nonnie!

And now for Fall apple pie making...

Just days before Thanksgiving, we had: 5 Mamas, 18 kiddos, lots of apples, dough made from scratch, yummy Fall spices, and lots of excitement as our wonderful group of friends began our Fall group classes! Our lessons always vary so much with the seasons. We have studied: science, manners, cooking, crafts, history, baking, and so much more.

This sweet group of ours is such a blessing. The children ( ages 2 to 13) do so well together, and have such a precious relationship with each other. It really is quite amazing and unique. We have been together for two years now and love it more each time we are together.

Long Time No Write...

In November, Dad gave me his old camera. So, I was thrilled in getting "new" little camera. I began snapping away....
Then we had End of Football season, trip to precious Aunt Becky's in Houston, Thanksgiving, followed by pre -Christmas classes and activities. Then came Christmas, company, and the many festivities that go with all of that.

But in all that, I have really been missing being here in my little space. So I began trying to post some pictures of the goings on around here, and find I am still trying to figure out the workings of my new inherited camera... :)

All to say, I will post pictures ( hopefully!) later today, when Jb can come and teach me ( what i am quite sure) will be the obvious in the workings of a simple camera!

Fall Pumpkin Patch With Friends

As with fall tradition, we went to the flower Mound Pumpkin Patch last week with precious friends. We all had so much fun, running, hiding, and examining the crop of pumpkins together.

Baby Girl's First Lost Tooth!

Well, there you have it! Our little girl has lost her very first tooth! When she so very excitedly announced ( about a month ago at dinner) "I think my tooth is loose." It was so sweet the way her Daddy replied to her news. He just kinda sat back in his chair and said ( ratherly gloomy and almost sad) " Darn-it!"

When we all kinda looked at him with puzzled faces, I asked what he meant. He just simply said " She is growing up!" Audrey replied in her very matter-of- fact ( yet gentle) self and said "Of course daddy, I am suppose to!"

So, the wait began for it to come out. A "wiggle here and a wiggle there" each day, helped the process along.

She finally lost the tooth on Monday, and has grinned just a bit bogger ever since!

Baked Apples

My sweet Alec loves baked apples. so, here is the simple recipe for how I bake them.

Baked Apples
Love: Jenny Burdge

4-8 apples ( or number of apples for amount of people you are serving.) Core each apple.
Place apples in buttered baking dish
Add about 1-2 Tbsp real butter inside and on top of each apple.
Sprinkle with Cinnamon and Sugar.
Bake in the oven on 350 for about 25 minutes.

*In the evening, if serving for dessert, we will put a scoop of Vanilla icecream on top of each apple.

Alice in the Making....

Audrey knew early on this Fall that she wanted to be Alice in Wonderland for Halloween! Ahhh... how happy I was that she chose such an enduring character to dress up as. We began to gather most of what we would need to turn her into Alice, but lacked a few things. One of them being a pinafore.

So.... I had to attempt to make one.

Not perfect. Far from store bought quality, and certainly lacking in real seamstress skills, but a pinafore we had!

But, it did bring a smile to Audrey's face. Thats all I was hoping for. And regardless that it lacks much skill and precision, I started and finished! ( and for me, thats HUGE!!)

Garage Sale Treasures

Ahhhh......I just love garage sales, always have. It really is more than half of the way I decorate our house! I always find such pleasure in finding old treasures, and re-purposing them.And to pay a fraction of what it would cost retail, is just so satisfying.

So, Saturday ( early before 9am soccer game,) I popped into one.Jackpot! I found a really wonderful solid pewter antique butter dish, a very old pair of jade green beads, and super funky lamp base ( I had bought the hot pink shade last year at a garage sale, and it had been waiting for just the right base.Today was the day to make the match.) And lastly, a silver plated pocket mirror.

I just wanted to share here a sweet little company that I recently ordered some family labels from. I am not really into "cutesy trendy things," so ordering labels etc wouldn't normally make my short list, for many reasons and one of those being financial.

However, after getting some good water-bottles ( on sale at Eddie Bauer,) and not wanting to loose them, I thought labels just may be the very thing that could get them returned to us , therefore saving money in the long run.

I found Amy Adele online and ordered from them. I have been so very please with the product! They even sent an adorable "Thank You card" with the order. I got about 30 labels for about $8.00 and they are waterproof! ( And yes, they really are... I have put them in the dishwasher and they have done great.) And to be a bit more econmical and also in the interest of safety (ie: not wanting our kids first names on everything,) I just simply had "Burdge" put on the labels.

And John, being the great sport he is, didn't even mind having his Camelback water bottle with a crab on it! :)

saturday Supper-Loaded Nachos!

Saturday, I made us Loaded Nachos. And they were pretty yummy. I made them with black beans, sharp cheddar cheese, grilled pork, and roasted Jalapenos with garlic ( for Jb's only. They were home-grown peppers and HOT!) and topped with dallop of sour cream.

The kids were thrilled and so appreciative. I heard things like:

" Oh boy! Real Nachos, like at a restaurant?"

" The kind of nachos that have cheese and "stuff" on them?" ( Is there any other kind? I thought..)

"Oh, these are what nachos are?" ( after one curious boy of mine tried to invision what I was really making..)

"Oh, those are what nachos are? I didn't know thats what you called them.."

Okay, so thinking I need to introduce our kiddos to a bit more "fun food." he he!

Our whole familyhas been playing "Flash-Light Hide and Go-Seek" in the evenings lately. The kids love getting out in the dark, with their flashlights, and hiding all over the front yard. To be honest, I think John and I love it just as much too!

Me, Crafting Again?!

You know me, not very good at the whole "Craft , Project-Making thing.." ( Nope, not even one little bit..)

But for me " Have Daughter, Will Craft!" is beginning to be my new adopted motto!

So, a few weeks ago, Audrey and I were in Michaels and she saw this little girly pumpkin, she wanted to make so very badly. With great hesitation ( and fear,) I (being the very visual and literal person that I am,) began to stand and literally draw out the pumpkin that was on display.

Within minutes, this ever-so-kind Michael's employee came and said to me " You know, you could take a picture of that with your phone, instead of drawing it?" "Ohh, of course I could. Just one problem, "I have no idea just how to do that," ( silly non electronic me....) replied to her.

Anyway, after a 10 minute tutorial on how my little phone really does take a picture, we were off collecting the supplies through-out the store. Piece by piece, instruction by instruction, I followed exactly what our helping friend guided me to do.

We got it all home, and laid it all out. I was committed that we would get this sweet craft done by that evening, (or there would be great risk in it not happening until Christmas! )

But, we did it! We started, and completed the pumpkin! The important thing was how much Audrey enjoyed making it. For me, I practiced working at the "joy" part of that word... But end the end, I really did find great joy in helping Audrey create something that was important to her. It turned out just how she had hoped, which had been my prayer from the very beginning....

Fort Worth Children's Museum

Recently, we went with our precious friends to the Fort Worth Children's Museum. It was a delightful day! We spent hours exploring, had a picnic, and just enjoyed each other. (The kiddos are still asking to go back.)

There were so many fun and educational activities to do at the museum, for all ages. From: a giant "Light Brite," to "Plate spinning," and a "3 -D Theater," one could easily spend days adventuring!

If you live in the area, it is a really neat field trip to go on..

Living For One

Our pastor ( Tom Nelson) said this last week:

" Many Christians would eagerly say 'I would die for Jesus.'
But, are they willing to LIVE for Jesus?"

I love this quote. It really pierced me.
My prayer is that I would meditate deeply and sincerely on this within my own wretched heart.
To live for an audience of one. My heart's desire. And in Him alone,by His grace, the strength to do it.

Better Late Than Never....Yes??

Okay, so confession. I am so not a "project type person." All those who know and love me, know this about me. So, I will just go ahead and post some concrete evidence right now.. Our youngest three kiddos and I went to Hobby Lobby and bought three small nutcrackers. The idea was ( of course theirs) to bring them home and paint them!

Great idea, you say? Of course it was!

(Too bad it took their Mother 9 months to get around to letting them do it!) Yes... We bought them LAST DECEMBER!

I believe I can say that I am a "Visionary person." I have Lots of ideas floating around in the brain, but to start ( and complete, a crafty type project....uhhh, well...for me that a problem.

But, I am still open to the many philosophies such as:

"The journey is half the fun...."

The "feeling of satisfaction one gets when a project is completed, is just so rewarding."

"Its not the end result that matters..."

I am always looking with admiration, to those of you who are crafty and enjoy being so...It really is very inspirational to me. I admire not only the craft you do, but more so your work ethic, follow-through, and clear level of diligence and patience you have.

But, hey,on the brightside, if you come see us at Christmas time, you will see three FINISHED nutcrackers on the mantle!

Good Mornin'

This morning the kiddos found a cure for "dailyness" by wearing their "eyeball goggles." I chuckled when I looked around and saw them sporting big eyes!
